Why we like it
A recipe given to Serafino by a Jesuit uncle has led over the years to the production of a special wine to be savored as a dessert wine, a traditional vinsanto that is not sweet but not dry, so it's enjoyable beyond the first glass. Once harvested, the grapes are dried in a continuously ventilated wooden and steel rack. Destemmed by hand, they are gently pressed, followed by a controlled vinification process to preserve their distinctive aromas and flavors. Aged in barriques for over 10 years, the resulting passito is elegant, pleasant, and not overly sweet.
